Kaz's Wicked
Double Choc Chip Cookies

125g margarine or butter
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon vanilla essence
1 egg
1+3/4 cup SR Four
125g white choc bits
125g milk choc bits

Bake at 180 degrees C (356 degrees F)
for 10 -12 mins. Best to remove from oven when a bit soft for a nice chewy cookie. 

Note: 
Care must be taken not to burn taste buds due to wicked temptation of eating cookies too soon after baking!
 

Aussie Favorite...
Pumpkin Scones

- you guys in the US call them 'biscuits'.
(we call cookies 'biscuits' - it's a crazy world!!!)

1 cup cold mashed pumpkin (approx 370grams)
1 egg beaten lightly
45 grams butter
1/4 cup caster sugar
2+1/2 cups Self Raising Flour
!/2 teaspoon cinnamon
milk - to mix

Cream butter and sugar until light and fluffy, gradually adding egg, then stir in pumpkin. Add sifted flour and cinnamon to pumpkin mix, stirring with a knife.  If mixture is too dry add a little milk to make a soft dough, but firm enough to knead.  Place dough on a lightly floured surface. Quickly and lightly knead dough until smooth. Press dough out evenly until approx 3cm thick (1 inch). Cut out with scone cutter or knife. Place scones side by side on a greased tray. Lightly brush with milk and bake in a hot oven for 15 mins or until scones sound hollow when tapped with fingers.

Makes approx 15.

Serve when warm with butter and jam (jelly) or cream and jam.

Note:
Not good with margaritas. Trust me on this.
 

From an Outback Cookbook...
King Kangaroo Schnitzel

Catch one kangaroo  - just kidding!
Start again:

1 Kangaroo rump
   - about.5 kgs (approx 3.3 pounds)
  
plain four for dipping.
2 eggs
dry packaged breadcrumbs

1. Cut rump into 2 pieces and cut off sinew.
(I think that’s the tough gristly looking bit. The fatty bit. Not having seen a bare kangaroo butt - I'm not sure...) 
2. Flatten pieces of rump with a mallet.
(can we say 'ouch'???)
3. Now coat both sides with flour.
(remind yourself that white is flattering)
4. Now dip into beaten egg and then into breadcrumbs, patting to make neat.
 
5. Fry your kangaroo steak in butter on moderate heat for a few minutes only.

Note:  Margaritas recommended.  Lots of them. Is it just me or is there something wrong about eating your national symbol??? Okay - this is just another issue I have to deal with and get past.. I know. I know... But I ask you... Do we see The Colonel offering "crispy Bald Eagle Wings with your choice of dipping sauce" in the US?? 'Nuff said.
